Ingredients

  • 1 tablespoon olive oil extra virgin
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can (28 ounces) crushed tomatoes undrained
  • 2 cups vegetable broth or chicken broth
  • 8 ounces short pasta such as rotini or penne
  • 2 cans (5 ounces each) tuna in water
  • 1/2 cup fresh basil chopped
  • 1/4 cup Parmesan cheese grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Heat olive oil in a large, deep skillet or Dutch oven over medium heat.
  • Add chopped onion and cook until softened, about 5 minutes.
  • Stir in minced garlic and cook for 1 minute more until fragrant.
  • Pour in the crushed tomatoes and vegetable broth, bringing the mixture to a simmer.
  • Add the dry pasta to the skillet, ensuring it's mostly submerged in the liquid. Stir well.
  • Cover the skillet and cook for 12-15 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking. If needed, add a splash more broth or water.
  • Remove from heat and stir in the drained tuna, chopped fresh basil, grated Parmesan cheese, salt, and black pepper.
  • Serve immediately, garnished with additional Parmesan cheese if desired.

Notes

For an extra layer of flavor, consider adding a dash of red pepper flakes for a subtle kick. A squeeze of fresh lemon juice at the end brightens the dish beautifully. You can use any short pasta shape you prefer, such as penne or rotini.
