- 2 medium apples cored and thinly sliced (e.g.

- 0.25 cup red onion thinly sliced
- 0.5 cup cucumber diced
- 0.25 cup crumbled goat cheese optional
- 3 tablespoons olive oil for dressing
- 1 tablespoon apple cider vinegar for dressing
- 1 teaspoon Dijon mustard for dressing
- 1 teaspoon maple syrup optional
- 0.25 teaspoon salt for dressing
- 0.125 teaspoon black pepper for dressing
Instructions
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup (if using), salt, and pepper to create the dressing.
