- 2 ea salmon fillets skin-on (about 6 oz each)
- 2 tbsp olive oil divided
- 1 tbsp lemon juice freshly squeezed
- 1 clove garlic minced
- 0.5 tsp dried oregano
- 0.25 tsp salt
- 0.125 tsp black pepper freshly ground
- 0.5 cup feta cheese crumbled
- 0.25 cup cherry tomatoes halved
- 2 tbsp red onion finely diced
- 1 tbsp fresh parsley chopped (for garnish)
Instructions
- 1. Pat salmon fillets dry with paper towels. In a small bowl, whisk together 1 tablespoon olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
- 2. Rub the marinade evenly over both sides of the salmon fillets. Let sit for 5 minutes while you prepare other ingredients.
- 3. In another small bowl, gently combine crumbled feta, halved cherry tomatoes, and finely diced red onion. Set aside.
- 4. Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat until shimmering.
