Ingredients
  

  • 2 ea salmon fillets skin-on (about 6 oz each)
  • 2 tbsp olive oil divided
  • 1 tbsp lemon juice freshly squeezed
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.125 tsp black pepper freshly ground
  • 0.5 cup feta cheese crumbled
  • 0.25 cup cherry tomatoes halved
  • 2 tbsp red onion finely diced
  • 1 tbsp fresh parsley chopped (for garnish)

Instructions
 

  • 1. Pat salmon fillets dry with paper towels. In a small bowl, whisk together 1 tablespoon olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
  • 2. Rub the marinade evenly over both sides of the salmon fillets. Let sit for 5 minutes while you prepare other ingredients.
  • 3. In another small bowl, gently combine crumbled feta, halved cherry tomatoes, and finely diced red onion. Set aside.
  • 4. Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat until shimmering.
  • 5. Carefully place the salmon fillets skin-side down in the hot skillet. Cook for 4-5 minutes, pressing gently with a spatula to ensure even contact for crispy skin.
  • 6. Flip the salmon fillets and cook for another 3-4 minutes, or until cooked through to your desired doneness.
  • 7. Remove the skillet from heat. Top each salmon fillet generously with the marinated feta mixture.
  • 8. Garnish with fresh chopped parsley and serve immediately with your favorite side.

Notes

Serve this salmon with a side of fluffy couscous, a simple green salad, or roasted asparagus for a complete meal. For an extra kick, add a pinch of red pepper flakes to the marinade. Ensure your skillet is very hot before adding the salmon, as this is key for achieving truly crispy skin.
