Ingredients
- 200 g spaghetti or linguine
- 2 tbsp olive oil
- 2 cloves garlic minced
- 250 g cherry tomatoes halved
- 0.5 cup fresh basil chopped
- 0.25 cup Parmesan cheese grated
Instructions
- Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain the rest.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Add halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften and burst.
- Add the drained pasta to the skillet with the tomatoes and garlic. Toss well to combine.
- Stir in fresh chopped basil and grated Parmesan cheese. If the sauce is too dry, add a splash of the reserved pasta water.
- Season with salt and freshly ground black pepper to taste. Serve hot.
Notes
For extra flavor, roast the cherry tomatoes slightly before adding to the pasta. A sprinkle of red pepper flakes adds a nice kick.
