Instructions
Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain the rest.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
Add halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften and burst.
Add the drained pasta to the skillet with the tomatoes and garlic. Toss well to combine.
Stir in fresh chopped basil and grated Parmesan cheese. If the sauce is too dry, add a splash of the reserved pasta water.
Season with salt and freshly ground black pepper to taste. Serve hot.
Notes
For extra flavor, roast the cherry tomatoes slightly before adding to the pasta. A sprinkle of red pepper flakes adds a nice kick.
