Ingredients
- 2 packs instant ramen noodles flavor packets discarded
- 4 cups vegetable broth
- 2 tbsp Cajun seasoning homemade or store-bought
- 1 tbsp butter or olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup corn kernels fresh or frozen
- 1 cup potatoes diced
- 0.5 cup smoked sausage sliced (optional
- 1 cup broccoli florets
- 1 lemon wedges for serving
- 2 tbsp fresh parsley chopped
Instructions
- In a large pot or Dutch oven, melt butter over medium heat. Add chopped onion and sauté until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in the Cajun seasoning and cook for 30 seconds, allowing the spices to bloom.
- Pour in the vegetable broth and bring to a boil. Add diced potatoes and cook for 5-7 minutes, or until slightly tender.
- Add corn kernels and broccoli florets (and sliced smoked sausage if using) to the pot. Cook for 3-4 minutes, until vegetables are tender-crisp.
- Add the ramen noodles (discarding flavor packets) and cook according to package directions, usually 2-3 minutes, stirring gently to separate the noodles.
