Ingredients
  

  • 2 packs instant ramen noodles flavor packets discarded
  • 4 cups vegetable broth
  • 2 tbsp Cajun seasoning homemade or store-bought
  • 1 tbsp butter or olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup corn kernels fresh or frozen
  • 1 cup potatoes diced
  • 0.5 cup smoked sausage sliced (optional
  • 1 cup broccoli florets
  • 1 lemon wedges for serving
  • 2 tbsp fresh parsley chopped

Instructions
 

  • In a large pot or Dutch oven, melt butter over medium heat. Add chopped onion and sauté until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.
  • Stir in the Cajun seasoning and cook for 30 seconds, allowing the spices to bloom.
  • Pour in the vegetable broth and bring to a boil. Add diced potatoes and cook for 5-7 minutes, or until slightly tender.
  • Add corn kernels and broccoli florets (and sliced smoked sausage if using) to the pot. Cook for 3-4 minutes, until vegetables are tender-crisp.
  • Add the ramen noodles (discarding flavor packets) and cook according to package directions, usually 2-3 minutes, stirring gently to separate the noodles.
  • Taste and adjust seasoning if needed. Serve immediately in bowls, garnished with fresh parsley and lemon wedges for a bright finish.

Notes

Feel free to customize with your favorite vegetables like corn, potatoes, or bell peppers. For extra protein, add smoked sausage (if not vegetarian), tofu, or chickpeas. Adjust Cajun seasoning to your spice preference. A squeeze of lemon at the end brightens the flavors.
