Juicy steak bites pan-seared and basted in a rich, herb-infused cowboy butter, served alongside creamy roasted garlic mashed potatoes for a complete and flavorful meal.
Ingredients
- 1.5 lbs sirloin or ribeye steak cut into 1-inch cubes
- 1 tbsp olive oil
- salt to taste
- black pepper to taste
- 1/2 cup unsalted butter softened
- 4-5 cloves garlic minced
- 1 tbsp fresh parsley chopped
- 1 tsp fresh thyme chopped
- 1 tsp fresh rosemary chopped
- 1 tsp Dijon mustard
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 2 lbs russet or Yukon Gold potatoes peeled and quartered
- 1 head garlic top sliced off
- 1 tbsp olive oil
- 1/2 cup whole milk warmed
- 1/4 cup unsalted butter softened
Instructions
- Preheat oven to 400°F (200°C). Drizzle the cut head of garlic with olive oil, wrap in foil, and roast for 30-40 minutes until soft.
- Place quartered potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook for 15-20 minutes, or until fork-tender. Drain well.
- While potatoes cook, make the Cowboy Butter: Combine softened butter, minced garlic, parsley, thyme, rosemary, Dijon, red pepper flakes, Worcestershire sauce, lemon juice, salt, and pepper in a small bowl. Mix well.
- Pat steak bites dry with paper towels. Season generously with salt and black pepper.
- Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat until shimmering. Add steak bites in a single layer, without crowding the pan. Sear for 2-3 minutes per side for medium-rare, or until desired doneness, developing a nice crust.
- Lower heat to medium-low. Add 2 tablespoons of Cowboy Butter to the skillet. Tilt the pan slightly and use a spoon to baste the steak bites with the melted butter for 1-2 minutes. Remove steak from pan and let rest for 5 minutes.
- Mash Potatoes: Squeeze roasted garlic cloves into the drained potatoes. Add warmed milk, softened butter, salt, and pepper. Mash until smooth and creamy.
- Serve the Cowboy Butter Steak Bites immediately alongside the Roasted Garlic Mashed Potatoes. Garnish with extra fresh parsley if desired.
Notes
For best results, use a cast-iron skillet to get a good sear on the steak. Adjust red pepper flakes to your spice preference. Leftover cowboy butter can be stored in the fridge for up to a week and used on other meats or vegetables. For the mashed potatoes, use whole milk or cream for extra richness.
