Cowboy Butter Steak Bites

Ingredients
  

  • 1.5 lbs sirloin or ribeye steak cut into 1-inch cubes
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • 1/2 cup unsalted butter softened
  • 4-5 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped
  • 1 tsp Dijon mustard
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 2 lbs russet or Yukon Gold potatoes peeled and quartered
  • 1 head garlic top sliced off
  • 1 tbsp olive oil
  • 1/2 cup whole milk warmed
  • 1/4 cup unsalted butter softened

Instructions
 

  • Preheat oven to 400°F (200°C). Drizzle the cut head of garlic with olive oil, wrap in foil, and roast for 30-40 minutes until soft.
  • Place quartered potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook for 15-20 minutes, or until fork-tender. Drain well.
  • While potatoes cook, make the Cowboy Butter: Combine softened butter, minced garlic, parsley, thyme, rosemary, Dijon, red pepper flakes, Worcestershire sauce, lemon juice, salt, and pepper in a small bowl. Mix well.
  • Pat steak bites dry with paper towels. Season generously with salt and black pepper.
  • Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat until shimmering. Add steak bites in a single layer, without crowding the pan. Sear for 2-3 minutes per side for medium-rare, or until desired doneness, developing a nice crust.
  • Lower heat to medium-low. Add 2 tablespoons of Cowboy Butter to the skillet. Tilt the pan slightly and use a spoon to baste the steak bites with the melted butter for 1-2 minutes. Remove steak from pan and let rest for 5 minutes.
  • Mash Potatoes: Squeeze roasted garlic cloves into the drained potatoes. Add warmed milk, softened butter, salt, and pepper. Mash until smooth and creamy.
  • Serve the Cowboy Butter Steak Bites immediately alongside the Roasted Garlic Mashed Potatoes. Garnish with extra fresh parsley if desired.

Notes

For best results, use a cast-iron skillet to get a good sear on the steak. Adjust red pepper flakes to your spice preference. Leftover cowboy butter can be stored in the fridge for up to a week and used on other meats or vegetables. For the mashed potatoes, use whole milk or cream for extra richness.
