Ingredients
  

  • 1 lb cod fillets fresh or thawed
  • 1 tbsp fresh ginger grated
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 1 whole lemon sliced

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
  • Pat cod fillets dry with paper towels. This helps prevent steaming and reduces fishiness.
  • In a small bowl, combine grated ginger, chopped parsley, chopped dill, garlic powder, salt, pepper, and olive oil.
  • Place cod fillets in the prepared baking dish. Spread the herb-ginger mixture evenly over each fillet.
  • Arrange lemon slices around and on top of the fish.
  • Bake for 15-20 minutes, or until the fish flakes easily with a fork. Cooking time will vary based on fillet thickness.
  • Serve immediately with your favorite side dishes.

Notes

For a citrusy kick, add lemon slices to the baking dish. You can substitute cod with other white fish like haddock or tilapia. Serve with roasted vegetables or a light salad.
