A quick and easy one-pan taco skillet featuring lean ground turkey, rice, and classic taco flavors, perfect for a busy weeknight.
Ingredients
- 1 tablespoon olive oil
- 1/2 medium red onion finely chopped
- 1 pound ground turkey lean
- 2 tablespoons tomato paste
- 2 tablespoons taco seasoning store-bought or homemade
- 1 cup long-grain white rice uncooked
- 2 cups chicken broth low sodium
- 1/2 cup corn frozen or canned
- 1/2 cup black beans canned
Instructions
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chopped red onion and cook until softened, about 3-4 minutes.
- Add the ground turkey to the skillet. Break it apart with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat from the pan.
- Stir in the tomato paste and taco seasoning, cooking for another minute until fragrant.
- Add the uncooked white rice, chicken broth, corn, and black beans to the skillet. Stir everything to combine. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 15-18 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork before serving. Serve hot with your preferred taco toppings.
Notes
For extra flavor, you can toast the dry rice in a little oil for 1-2 minutes before adding the broth. Garnish with your favorite taco toppings like sour cream, avocado, fresh cilantro, shredded cheese, or a squeeze of lime juice.
