30-Min. One-Pan Turkey Tacos

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 medium red onion finely chopped
  • 1 pound ground turkey lean
  • 2 tablespoons tomato paste
  • 2 tablespoons taco seasoning store-bought or homemade
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth low sodium
  • 1/2 cup corn frozen or canned
  • 1/2 cup black beans canned

Instructions
 

  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chopped red onion and cook until softened, about 3-4 minutes.
  • Add the ground turkey to the skillet. Break it apart with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat from the pan.
  • Stir in the tomato paste and taco seasoning, cooking for another minute until fragrant.
  • Add the uncooked white rice, chicken broth, corn, and black beans to the skillet. Stir everything to combine. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 15-18 minutes, or until the rice is tender and most of the liquid has been absorbed.
  • Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork before serving. Serve hot with your preferred taco toppings.

Notes

For extra flavor, you can toast the dry rice in a little oil for 1-2 minutes before adding the broth. Garnish with your favorite taco toppings like sour cream, avocado, fresh cilantro, shredded cheese, or a squeeze of lime juice.
