Zesty Green Seasoning
A vibrant, aromatic, and versatile green seasoning, a staple in Caribbean cuisine, perfect for marinades, stews, and grilled dishes.
Ingredients
- 1 cup fresh parsley roughly chopped
- 1 cup fresh cilantro roughly chopped
- 4 stalks green onions chopped
- 6 cloves garlic peeled
- 1 piece Scotch bonnet pepper deseeded for less heat (or whole for more)
- 1 inch fresh ginger peeled and sliced
- 1 teaspoon salt or to taste
- 2 tablespoons water or oil
Instructions
- Roughly chop the parsley, cilantro, and green onions. Peel and slice the ginger and garlic. Prepare the Scotch bonnet pepper as desired.
- Combine chopped parsley, cilantro, green onions, garlic, Scotch bonnet pepper, and ginger in a blender or food processor.
- Add salt and 2 tablespoons of water or oil to the blender.
- Blend until the mixture is smooth, adding more water or oil if necessary to achieve desired consistency.
- Taste and adjust salt or other ingredients as needed. Store in an airtight container.
Notes
This seasoning can be stored in an airtight container in the refrigerator for up to two weeks, or frozen in ice cube trays for longer preservation. Adjust Scotch bonnet to your preferred spice level. Excellent as a marinade for chicken, fish, or pork, and a flavor base for soups and stews.
