Ingredients
  

  • 1/2 cup fresh flat-leaf parsley finely chopped
  • 1/4 cup fresh coriander (cilantro) finely chopped
  • 1 medium shallot finely minced
  • 2 cloves garlic minced
  • 1/2 tsp red chili flakes or 1 small fresh chili minced
  • 1/2 tsp dried oregano
  • 1/4 tsp smoked paprika
  • 2 tbsp red wine vinegar
  • 1/2 tsp sea salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 1/4 cup extra virgin olive oil optional

Instructions
 

  • Prepare your herbs and aromatics: Finely chop the fresh flat-leaf parsley and coriander. Finely mince the shallot and garlic cloves.
  • Combine dry ingredients: In a medium bowl, add the chopped parsley, coriander, minced shallot, minced garlic, red chili flakes, dried oregano, and smoked paprika.
  • Add liquids and seasonings: Pour in the red wine vinegar. Add the sea salt and freshly ground black pepper.
  • Mix and mellow: Stir all the ingredients together thoroughly until well combined. Let the mixture sit for 5 to 10 minutes to allow the flavors to meld and for the raw garlic and shallot notes to mellow slightly.
  • Serve: Give it a final stir and taste to adjust any seasonings. This vibrant sauce is ready to be served as a flavorful condiment or marinade base. For a traditional vinaigrette, whisk in 1/4 cup of extra virgin olive oil before serving.

Notes

For a complete vinaigrette, whisk in 1/4 cup extra virgin olive oil after step 4. This sauce is excellent on grilled steak, chicken, fish, or stirred into roasted vegetables. Adjust chili flakes for desired heat. Store refrigerated for up to 3 days.
