Ingredients
  

  • 85 gram ramen noodles or udon noodles discard seasoning packet
  • 2 tablespoon gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar or honey
  • 1 clove garlic minced
  • 0.5 teaspoon ginger grated
  • 0.25 cup water or vegetable broth
  • 1 cup spinach fresh
  • 2 tablespoon scallions chopped
  • 1 teaspoon sesame seeds for garnish

Instructions
 

  • Cook the noodles according to package directions. Drain and set aside.
  • While noodles cook, prepare the sauce. In a medium bowl, whisk together gochujang, soy sauce, sesame oil, rice vinegar, brown sugar, minced garlic, grated ginger, and water or vegetable broth until well combined.
  • Heat a large skillet or wok over medium heat. Add the cooked and drained noodles to the skillet.
  • Pour the sauce over the noodles and toss to coat evenly. Cook for 2-3 minutes, stirring constantly, until the sauce thickens slightly and clings to the noodles.
  • Add the fresh spinach to the skillet and toss until it wilts, about 1 minute.
  • Remove from heat. Serve immediately, garnished with chopped scallions and sesame seeds.

Notes

For extra protein, add cooked chicken, shrimp, or pan-fried tofu. Adjust the amount of gochujang for your preferred spice level. A tablespoon of peanut butter can be added to the sauce for a creamier, nuttier flavor. Garnish with chopped peanuts or a fried egg for extra richness.
