Ingredients
  

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup milk
  • 2 cups heavy cream cold
  • 0.5 cup powdered sugar
  • 2 pounds fresh strawberries sliced and whole for decoration
  • 1 tablespoon lemon juice optional for berries

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a large bowl, beat eggs and granulated sugar until light and fluffy. Stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture.
  • Gently fold in the milk until just combined. Divide batter evenly between prepared cake pans.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes, then invert onto a wire rack to cool completely.
  • While cake cools, slice half of the strawberries and set aside the other half for decoration. Optionally, toss sliced strawberries with a tablespoon of lemon juice for extra brightness.
  • In a cold bowl, whip heavy cream and powdered sugar until stiff peaks form.
  • Once cakes are completely cool, level them if necessary. Place one cake layer on a serving platter. Spread about one-third of the whipped cream over the cake, then arrange half of the sliced strawberries on top.
  • Place the second cake layer on top. Repeat with another third of the whipped cream and the remaining sliced strawberries.
  • Frost the top and sides of the cake with the remaining whipped cream. Decorate with the whole strawberries.
  • Chill the cake for at least 1-2 hours before serving for best flavor and stability.

Notes

For best results, chill the assembled cake for at least 1-2 hours before serving. Ensure strawberries are perfectly ripe and sweet. A touch of lemon zest in the whipped cream can add a delightful freshness. This cake is best enjoyed within 2 days.
