Ingredients
  

  • 1 block extra-firm tofu 14-16 oz
  • 1/2 cup plain yogurt dairy or non-dairy
  • 2 tbsp tandoori paste or 1.5 tbsp tandoori masala powder
  • 1 tbsp ginger-garlic paste
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes
  • 1/4 cup fresh cilantro chopped
  • salt and black pepper

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  • In a large bowl, whisk together the plain yogurt, tandoori paste (or masala powder), ginger-garlic paste, lemon juice, olive oil, salt, and black pepper until well combined.
  • Add the pressed tofu cubes, chopped red and yellow bell peppers, and sliced red onion to the bowl with the marinade. Toss gently to ensure all the tofu and vegetables are evenly coated.
  • Spread the marinated tofu and vegetables in a single layer on the prepared sheet pan. Make sure not to overcrowd the pan, as this helps everything roast evenly and get slightly crispy.
  • Bake for 20-25 minutes, stirring the ingredients halfway through, until the tofu is lightly browned and the vegetables are tender-crisp.
  • Add the halved cherry tomatoes to the sheet pan and continue to bake for another 5-7 minutes, or until the tomatoes are softened and slightly burst.
  • Remove the sheet pan from the oven. Garnish generously with fresh chopped cilantro before serving immediately. Enjoy your flavorful Sheet Pan Tandoori Tofu!

Notes

For best results, ensure your tofu is pressed thoroughly to remove excess water, allowing it to absorb the marinade better. Feel free to substitute other quick-cooking vegetables like broccoli florets, cauliflower, or green beans. Serve with a side of basmati rice, warm naan bread, or a fresh cucumber raita for a complete meal. Leftovers are delicious cold in salads!
