Ingredients
  

  • 1 lb boneless skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 0.5 tsp paprika
  • 0.5 tsp turmeric
  • 0.25 tsp cinnamon
  • 0.25 tsp cayenne pepper optional
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 can (15-oz) chickpeas drained and rinsed
  • 0.25 cup tahini
  • 2 cloves garlic minced
  • 2 tbsp lemon juice or more to taste
  • 0.5 tsp salt
  • 3 tbsp cold water or more as needed
  • 2 tbsp olive oil for garnish
  • 1 tsp paprika for garnish
  • 2 tbsp fresh parsley chopped

Instructions
 

  • 1. Marinate the Chicken: In a bowl, combine chicken strips with olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne (if using), salt, black pepper, minced garlic, and lemon juice. Mix well, cover, and marinate for at least 30 minutes, or ideally 2-4 hours in the refrigerator.
  • 2. Prepare the Hummus: While chicken marinates, combine drained chickpeas, tahini, minced garlic, lemon juice, salt, and 2 tablespoons of cold water in a food processor. Blend until very smooth and creamy, scraping down the sides as needed. If the hummus is too thick, add more cold water one tablespoon at a time until desired consistency is reached.
  • 3. Cook the Chicken: Heat a large skillet or cast-iron pan over medium-high heat. Add the marinated chicken in a single layer (cook in batches if necessary to avoid overcrowding). Cook for 5-7 minutes, stirring occasionally, until chicken is cooked through and lightly browned at the edges.
  • 4. Assemble the Feast: Spread the prepared hummus onto a large serving plate or individual bowls. Top generously with the cooked chicken shawarma. Drizzle with olive oil, sprinkle with paprika, and garnish with fresh chopped parsley.
  • 5. Serve: Serve immediately with warm pita bread, fresh cucumber slices, tomato, and pickled turnip or any preferred side dishes.

Notes

For extra creamy hummus, ensure your chickpeas are well-cooked and remove their skins if you have time. Adjust the spices in the shawarma to your preference, adding more heat with a pinch of cayenne if desired. Serve with warm pita bread, fresh vegetables, and a drizzle of olive oil. Consider pickling your own turnips for an authentic side!
