Savory Pork & Soybean Stir-fry

A quick and flavorful stir-fry featuring tender pork mince, aromatic garlic and spring onion, and a rich, savory-sweet fermented soybean paste. This dish is perfect served over rice or noodles.

Ingredients
  

  • 1 tablespoon vegetable oil
  • 500 gram pork mince
  • 2 cloves garlic minced
  • 2 stalks spring onion chopped (white and green parts separated)
  • 2 tablespoons fermented sweet soybean paste (Tianmianjiang or similar)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/4 cup water or chicken broth
  • 1/2 teaspoon sesame oil optional

Instructions
 

  • Heat vegetable oil in a wok or large frying pan over medium-high heat.
  • Add pork mince and stir-fry, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  • Add the white parts of the chopped spring onion and minced garlic to the pan. Stir-fry for 1 minute until fragrant.
  • Stir in the fermented sweet soybean paste, soy sauce, and sugar. Cook for 1-2 minutes, stirring constantly, to allow the flavors to meld.
  • Pour in the water or chicken broth and bring to a simmer. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
  • Remove from heat and stir in the green parts of the spring onion and sesame oil (if using).
  • Serve immediately over steamed rice or noodles.

Notes

For a spicier kick, add a pinch of chili flakes or a teaspoon of chili bean paste (doubanjiang) along with the soybean paste. You can also add other vegetables like diced bell peppers, shredded carrots, or snow peas. This stir-fry is excellent served with steamed rice or tossed with cooked noodles.
