Ingredients
  

  • 1.5 kg boneless skinless chicken breasts or thighs about 3 lbs
  • 1 cup salsa verde
  • 1 tsp cumin ground
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground

Instructions
 

  • Place the chicken breasts or thighs in a single layer at the bottom of your slow cooker.
  • Pour the salsa verde over the chicken.
  • Sprinkle the cumin, garlic powder, onion powder, paprika, salt, and black pepper evenly over the chicken.
  • Stir gently to ensure all chicken pieces are coated with the salsa verde and spices.
  • Cover the slow cooker and cook on low for 5-6 hours, or on high for 2.5-3.5 hours, until the chicken is tender and easily shredded with a fork.
  • Carefully remove the chicken from the slow cooker and place it on a cutting board. Shred the chicken using two forks.
  • Return the shredded chicken to the slow cooker, tossing it with the remaining sauce to absorb the flavors.
  • Serve warm in tacos, burritos, over rice, or as desired.

Notes

For a spicier kick, use a hot salsa verde. You can also add 1/4 cup of chicken broth to the slow cooker if your salsa verde is very thick. This chicken is fantastic for meal prep; simply shred and store in the fridge for up to 4 days. Serve with warm tortillas, rice, or in lettuce wraps.
