Ingredients
  

  • 1.5 cup all-purpose flour
  • 3.5 tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1.25 cup milk
  • 1 egg large
  • 3 tbsp melted butter

Instructions
 

  • In a large bowl, sift together the flour, baking powder, salt, and sugar.
  • In a separate bowl, whisk together the milk, egg, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are perfectly acceptable.
  • Heat a lightly oiled griddle or frying pan over medium-high heat.
  • Pour about 1/4 cup of batter per pancake onto the hot griddle.
  • Cook for 2-3 minutes per side, or until golden brown and cooked through.
  • Serve immediately with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.

Notes

For extra fluffiness, make sure not to overmix the batter; a few lumps are fine. Let the batter rest for 5 minutes before cooking. Serve hot with butter, maple syrup, and your favorite berries.
