Ingredients
  

  • 2 cup mixed greens such as romaine and spinach
  • 1 medium cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup Kalamata olives pitted and halved
  • 0.5 cup feta cheese crumbled
  • 0.25 cup red onion thinly sliced
  • 2 tbsp fresh parsley chopped
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp lemon juice freshly squeezed
  • 0.5 tsp dried oregano
  • pinch salt
  • pinch black pepper

Instructions
 

  • In a large bowl, combine the mixed greens, diced cucumber, halved cherry tomatoes, Kalamata olives, crumbled feta cheese, and sliced red onion.
  • In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, salt, and black pepper to create the dressing.
  • Pour the dressing over the salad ingredients.
  • Gently toss the salad until all ingredients are well coated with the dressing.
  • Garnish with fresh chopped parsley and serve immediately.

Notes

For an added protein boost, grill some chicken or chickpeas and add them to the salad. Adjust dressing to taste, and feel free to include other seasonal vegetables like bell peppers or radishes. Serve immediately for best freshness.
