Ingredients
  

  • 2.5 cup all-purpose flour
  • 1.5 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp unsweetened cocoa powder
  • 0.5 tsp salt
  • 1 cup buttermilk room temperature
  • 1 cup vegetable oil
  • 2 large eggs room temperature
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 1 oz red food coloring liquid or gel
  • 8 oz cream cheese softened (for frosting)
  • 0.5 cup unsalted butter softened (for frosting)
  • 4 cup powdered sugar sifted (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 1 tbsp milk or heavy cream optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking soda, cocoa powder, and salt.
  • In a separate medium bowl, whisk together the buttermilk, vegetable oil, eggs, white vinegar, vanilla extract, and red food coloring until well combined.
  • Pour the wet ingredients into the dry ingredients and mix with an electric mixer on low speed until just combined. Do not overmix.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  • For the Cream Cheese Frosting: In a large bowl, beat the softened cream cheese and butter with an electric mixer until smooth and creamy.
  • Gradually add the sifted powdered sugar, beating until fully incorporated.
  • Add the vanilla extract and milk (if using), and beat until light and fluffy.
  • Once the cakes are completely cool, frost the layers and top of the cake with the cream cheese frosting.

Notes

For the best red color, use gel food coloring. Ensure all cold ingredients are at room temperature for a smooth batter. Do not overmix. Store leftovers in the refrigerator to keep the frosting fresh.
