Ingredients
  

  • 1 cup fresh parsley stems removed
  • 0.5 cup fresh cilantro stems removed
  • 2 cloves garlic peeled
  • 0.25 cup fresh lemon juice
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons tahini
  • 0.25 cup water or more as needed
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper
  • 1 pinch red pepper flakes optional

Instructions
 

  • Add fresh parsley, cilantro, garlic, lemon juice, olive oil, tahini, water, salt, black pepper, and red pepper flakes (if using) to a blender or food processor.
  • Blend on high until all ingredients are thoroughly combined and the sauce is smooth, scraping down the sides as needed to ensure an even consistency.
  • Gradually add more water, one tablespoon at a time, blending after each addition, until your desired consistency is reached. (The sauce will thicken as it sits).
  • Taste the sauce and adjust seasonings if necessary, adding more salt, lemon juice, or spices to suit your preference.
  • Serve immediately over salads, grilled meats, vegetables, or as a vibrant dip. Store any leftovers in an airtight container in the refrigerator for up to 5 days.

Notes

For a creamier texture, add 1-2 tablespoons of Greek yogurt or a quarter of an avocado. To make it spicy, include a small fresh jalapeƱo or an extra pinch of chili flakes. This sauce stores well in an airtight container in the refrigerator for up to 5 days. It's excellent on tacos, grain bowls, or as a spread on sandwiches.
