Ingredients
  

  • 8 count Flour tortillas (large
  • 1 cup Shredded mozzarella cheese
  • 1 cup Pepperoni slices (mini or regular
  • 0.5 cup Pizza sauce (optional
  • 2 tablespoons Olive oil (for brushing)

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly grease a large baking sheet or line with parchment paper.
  • Lay out the tortillas on a clean surface. If desired, spread 1-2 tablespoons of pizza sauce evenly over each tortilla.
  • Sprinkle about 2 tablespoons of mozzarella cheese down the center of each tortilla. Top with a generous amount of pepperoni slices.
  • Carefully fold in the sides of each tortilla, then roll it up tightly from the bottom to form a burrito. Ensure the filling is securely enclosed.
  • Place the rolled burritos seam-side down on the prepared baking sheet. Brush the tops of the burritos lightly with olive oil.
  • Bake for 15-20 minutes, or until the tortillas are golden brown and crispy, and the cheese inside is melted and bubbly. For extra cheesiness, sprinkle a little more mozzarella on top during the last 5 minutes of baking.

Notes

Serve with warm marinara sauce or ranch dressing for dipping. For added nutrition, sneak in some finely diced bell peppers or spinach with the pepperoni and cheese.
