Quick Garlic Pork Stir-Fry

Ingredients
  

  • 1 lb pork loin or tenderloin thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 0.5 tsp sugar
  • 1 tbsp vegetable oil
  • 3 cloves garlic minced
  • 0.5 medium onion thinly sliced
  • 0.25 cup chicken broth or water
  • 1 tbsp oyster sauce optional
  • 1 tsp fresh ginger grated (optional)
  • 2 green onions chopped for garnish

Instructions
 

  • Slice the pork loin or tenderloin thinly against the grain. In a medium bowl, combine the sliced pork with soy sauce, cornstarch, sesame oil, sugar, and black pepper. Mix well and let marinate for at least 15 minutes at room temperature, or up to 30 minutes in the refrigerator.
  • Heat the vegetable oil in a wok or large skillet over medium-high heat until shimmering and almost smoking.
  • Add the minced garlic and thinly sliced onion to the hot wok. Stir-fry for 30-60 seconds until fragrant, being careful not to burn the garlic.
  • Add the marinated pork to the wok, spreading it out in a single layer. Let it cook undisturbed for 1-2 minutes to get a good sear on one side.
  • Stir-fry the pork for another 2-3 minutes, breaking it apart, until it is almost cooked through and lightly browned.
  • Pour in the chicken broth (or water) and oyster sauce (if using). If desired, add grated fresh ginger at this stage. Bring the liquid to a simmer, stirring constantly, and cook for 1-2 minutes until the sauce slightly thickens and the pork is fully cooked through.
  • Garnish the stir-fry with fresh chopped green onions. Serve immediately with hot steamed rice or noodles.

Notes

For added nutrition and color, incorporate sliced bell peppers, broccoli florets, or snap peas during the last few minutes of stir-frying. Adjust the amount of chili flakes for more heat. Serve immediately over steamed jasmine rice or noodles.
