Ingredients
  

  • 1 pound pre-cooked chicken sausage sliced into 1/2-inch rounds
  • 2 cups broccoli florets
  • 1 cup bell pepper sliced (any color)
  • 1 cup zucchini chopped
  • 1 medium red onion cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • In a large bowl, combine sliced chicken sausage, broccoli, bell pepper, zucchini, and red onion.
  • Drizzle with olive oil, then sprinkle with garlic powder, oregano, salt, and pepper. Toss until everything is evenly coated.
  • Spread the mixture in a single layer on the prepared baking sheet.
  • Roast for 20-25 minutes, or until vegetables are tender-crisp and lightly browned, and sausage is heated through.
  • Serve hot and enjoy!

Notes

Use your favorite seasonal vegetables like bell peppers, zucchini, broccoli, or sweet potatoes. Line the pan with parchment paper for easy cleanup. Serve with quinoa or rice if desired. Adjust seasoning to taste.
