Ingredients
  

  • 1.5 lb boneless skinless chicken breast
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.25 tsp paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 large bell pepper any color
  • 1 medium red onion sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup chicken broth
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large bowl, combine chicken cubes with olive oil, oregano, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  • Spread the seasoned chicken in a single layer on a large baking sheet. Add bell pepper strips and red onion slices to the sheet around the chicken.
  • Bake for 15 minutes. Remove from oven, add halved cherry tomatoes and chicken broth, tossing gently to combine.
  • Return to oven and bake for another 5-7 minutes, or until chicken is cooked through and vegetables are tender-crisp.
  • Drizzle with fresh lemon juice and garnish with chopped fresh parsley before serving.

Notes

Feel free to swap chicken with firm tofu or pork tenderloin. Experiment with different vegetables like zucchini, green beans, or asparagus. A sprinkle of Parmesan cheese or a dollop of Greek yogurt can be added when serving.
