A quick and delicious recipe for crispy salmon bites, perfect for a busy weeknight meal. These flavorful salmon pieces are baked to perfection and tossed in a savory-sweet glaze, served ideally with Minute Rice for a complete dish.

Ingredients
  

  • 1 lb boneless skinless salmon fillet
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 clove garlic minced
  • 1/2 tsp grated fresh ginger (optional)
  • 1 tbsp sesame seeds for garnish
  • 2 cups cooked Minute Rice for serving

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a medium bowl, toss salmon cubes with olive oil, salt, and pepper until evenly coated.
  • Arrange salmon in a single layer on the prepared baking sheet.
  • Bake for 12-15 minutes, or until salmon is cooked through and lightly crispy.
  • While salmon bakes, whisk together soy sauce, honey, rice vinegar, minced garlic, and grated ginger (if using) in a small bowl to create the sauce.
  • Once salmon is out of the oven, immediately transfer to a clean bowl and pour the sauce over the top. Gently toss to coat all the salmon bites.
  • Garnish with sesame seeds. Serve hot over Minute Rice Cups.

Notes

For extra crispiness, ensure salmon is patted very dry before baking. You can substitute honey with maple syrup or brown sugar in the sauce. Serve with steamed vegetables like broccoli or asparagus, or a fresh green salad for a complete meal.
