Quick Chicken Tofu Stir-Fry

Ingredients
  

  • 1 pound boneless skinless chicken breasts or thighs
  • 1 block firm or extra-firm tofu (14-16 oz) pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ginger grated
  • 2 cloves garlic minced
  • 2 tablespoons vegetable oil divided
  • 1 cup broccoli florets (optional)
  • 1/4 cup chicken broth
  • 1 tablespoon honey or brown sugar
  • Green onions for garnish sliced
  • Sesame seeds for garnish (optional)

Instructions
 

  • 1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, grated ginger, minced garlic, chicken broth, and honey or brown sugar. Set aside.
  • 2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • 3. Add chicken pieces and cook undisturbed on the first side for 7 minutes until browned. Flip and continue to cook for another 5-7 minutes until cooked through. Remove chicken from the skillet and set aside.
  • 4. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the pressed and cubed tofu. Cook for 5-7 minutes, flipping occasionally, until golden brown and crispy.
  • 5. If using, add broccoli florets to the skillet with the tofu and stir-fry for 3-4 minutes until tender-crisp.
  • 6. Return the cooked chicken to the skillet. Give the prepared sauce a quick stir and pour it over the chicken and tofu. Bring to a simmer and cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.
  • 7. Transfer the Quick Chicken & Tofu Stir-Fry to serving plates. Garnish with sliced green onions and sesame seeds, if desired. Serve immediately with steamed rice or noodles.

Notes

For extra crispiness, press the tofu before cooking to remove excess water. Serve with steamed jasmine rice or your favorite noodles. Feel free to add more vegetables like sliced bell peppers, snap peas, or carrots for added color and nutrition. Adjust the spice level with a pinch of red pepper flakes if desired.
