Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 2 tbsp soy sauce divided
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil divided
  • 1 tbsp vegetable oil
  • 1 medium bell pepper sliced (any color)
  • 1 medium onion sliced
  • 2 cups mixed stir-fry vegetables such as carrots
  • 3 cloves garlic minced
  • 1 inch fresh ginger grated
  • 1/2 cup chicken broth
  • 1 tbsp hoisin sauce
  • 1 tsp rice vinegar
  • 1/2 tsp sugar

Instructions
 

  • In a bowl, toss the chicken pieces with 1 tablespoon soy sauce and cornstarch until coated.
  • In a small bowl, whisk together the remaining 1 tablespoon soy sauce, chicken broth, hoisin sauce, rice vinegar, and sugar. Set aside.
  • Heat 1 tablespoon sesame oil and vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry for 3-5 minutes until browned and cooked through. Remove chicken from skillet and set aside.
  • Add bell pepper and onion to the skillet, stir-fry for 3 minutes until slightly tender-crisp.
  • Add the mixed stir-fry vegetables, garlic, and grated ginger. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.
  • Return the cooked chicken to the skillet. Pour the sauce mixture over the chicken and vegetables. Bring to a simmer and cook for 1-2 minutes, stirring constantly, until the sauce thickens.
  • Serve immediately over cooked rice.

Notes

For extra crunch, add chopped cashews or peanuts at the end. You can also customize the vegetables based on what you have on hand, like broccoli, snap peas, or mushrooms. Serve over rice or noodles.
