Ingredients
  

  • 200 g instant noodles or ramen without seasoning packet
  • 1 tbsp vegetable oil
  • 1 clove garlic minced
  • 0.5 inch ginger grated (optional)
  • 1 cup mixed vegetables julienned (e.g.
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 2 tbsp water or broth
  • 0.5 tsp cornstarch mixed with 1 tbsp water (slurry)
  • 1 tbsp green onions chopped (for garnish)
  • pinch red pepper flakes (optional for heat)

Instructions
 

  • Cook noodles according to package directions. Drain and set aside.
  • While noodles cook, prepare the sauce: In a small bowl, whisk together soy sauce, oyster sauce (if using), sesame oil, sugar, and 2 tbsp water or broth. Set aside.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger (if using), stir-fry for 30 seconds until fragrant.
  • Add mixed vegetables to the skillet and stir-fry for 2-3 minutes until slightly tender-crisp.
  • Pour the prepared sauce into the skillet. Bring to a simmer. Add the cornstarch slurry and stir quickly until the sauce thickens.
  • Add the cooked and drained noodles to the skillet. Toss everything together until the noodles are well coated with the sauce and heated through.
  • Garnish with chopped green onions and red pepper flakes (if using). Serve immediately.

Notes

Feel free to customize this recipe with any vegetables or protein you have on hand. Chicken, shrimp, tofu, or extra veggies like broccoli or snap peas work wonderfully. Adjust spice level with a dash of sriracha or chili flakes. Serve immediately for best texture.
