Puerto Rican Beef Stir Fry

Ingredients
  

  • 1 lb beef flank steak thinly sliced against the grain
  • 2 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup bell peppers sliced (red and green)
  • 1/2 cup onion sliced
  • 2 cloves garlic minced
  • 2 tbsp sofrito
  • 1 tsp adobo seasoning
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1 tbsp white vinegar
  • 2 tbsp fresh cilantro chopped for garnish

Instructions
 

  • In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, water, and white vinegar until smooth. Set aside.
  • Heat olive oil in a large wok or skillet over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the wok and set aside.
  • Add the sliced onions and bell peppers to the wok, stir-fry for 3-5 minutes until they are slightly tender-crisp. Then add the broccoli florets and cook for another 2 minutes.
  • Stir in the minced garlic, sofrito, and adobo seasoning. Cook for 1 minute until fragrant.
  • Return the cooked beef to the wok. Pour in the prepared sauce mixture. Cook, stirring constantly, until the sauce thickens and evenly coats the beef and vegetables, about 2-3 minutes.
  • Remove from heat, garnish with fresh chopped cilantro, and serve immediately with your favorite rice.

Notes

For best results, use flank steak or sirloin, sliced thinly against the grain. Adjust the spice level by adding more or less adobo seasoning to taste. This dish pairs wonderfully with a side of fluffy white rice or traditional arroz con gandules.
