Ingredients
  

  • 8 oz pasta any short shape like penne or rotini
  • 1 tbsp olive oil
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 can (15 oz) cannellini beans rinsed and drained
  • 0.5 tsp garlic powder or 1-2 cloves fresh minced garlic
  • 0.25 tsp dried oregano
  • 0.25 cup vegetable broth or water (optional
  • salt and pepper to taste

Instructions
 

  • 1. Cook pasta according to package directions until al dente. Drain and set aside.
  • 2. While pasta cooks, heat olive oil in a large skillet or pot over medium heat. If using fresh minced garlic, add and sauté for 30 seconds until fragrant.
  • 3. Stir in the undrained diced tomatoes, rinsed and drained cannellini beans, garlic powder, and dried oregano.
  • 4. Bring the sauce to a gentle simmer and cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly. If desired, add vegetable broth or water for a thinner sauce consistency.
  • 5. Add the cooked pasta to the skillet with the sauce. Toss to combine, ensuring the pasta is well coated.
  • 6. Season with salt and freshly ground black pepper to taste. Serve hot.

Notes

Feel free to add any fresh vegetables you have on hand, like spinach, bell peppers, or zucchini during step 3. A sprinkle of nutritional yeast or grated Parmesan cheese can add a cheesy flavor. Adjust spice levels to your liking. This recipe is easily scalable for more servings.
