Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef lean
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1.5 pounds potatoes peeled and diced into 1/2-inch cubes
  • 1 cup beef broth
  • 4 ounces cream cheese softened
  • 1/2 cup milk or half-and-half
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary crushed
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and onion, cook until beef is browned and onion is softened, breaking up the beef as it cooks. Drain any excess grease.
  • Stir in minced garlic, dried thyme, and dried rosemary, and cook for 1 minute until fragrant.
  • Add diced potatoes and beef broth to the skillet. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes, or until potatoes are tender when pierced with a fork.
  • Uncover and stir in softened cream cheese and milk until melted and combined into a creamy sauce. Season generously with salt and black pepper to taste.
  • Sprinkle the shredded cheddar cheese evenly over the top of the skillet. Cover and cook for another 2-3 minutes, or until the cheese is melted and bubbly. For a golden-brown top, you can carefully place the skillet under a broiler for 1-2 minutes (watch carefully to prevent burning).
  • Remove from heat and let stand for a few minutes before serving hot. Enjoy your easy one-pan creamy skillet!

Notes

For a lighter version, use ground turkey or chicken. Add a pinch of smoked paprika for extra depth of flavor. Serve with a simple green salad to complete the meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
