Ingredients
  

  • 2 cup all-purpose flour plus more for dusting
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup warm water
  • 2 tablespoon olive oil plus more for cooking

Instructions
 

  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the warm water and 2 tablespoons of olive oil, mixing until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  • Divide the dough into 6-8 equal pieces and roll each into a ball.
  • Using a rolling pin, flatten each ball into a thin, round flatbread, about 6-8 inches in diameter.
  • Heat a large cast-iron skillet or non-stick pan over medium-high heat. Add a little olive oil if needed.
  • Cook each flatbread for 2-3 minutes per side, until puffed and golden brown spots appear.
  • Remove from pan and serve warm.

Notes

Experiment with herbs like rosemary or garlic powder in the dough for added flavor. Serve hot with dips, curries, or as a wrap. Ensure your pan is hot enough for a good sear but not smoking. Adjust flour or water as needed for dough consistency. You can also brush with melted butter and fresh herbs after cooking.
