Ingredients
  

  • 1/4 cup gochujang Korean chili paste
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce low-sodium
  • 1 tbsp sesame oil toasted
  • 1 tbsp honey or maple syrup
  • 1 tsp ginger grated fresh
  • 1 clove garlic minced
  • 2 tbsp water or more for desired consistency
  • 1 tsp sesame seeds for garnish (optional)

Instructions
 

  • In a small bowl, combine gochujang, rice vinegar, soy sauce, toasted sesame oil, honey (or maple syrup), grated ginger, and minced garlic.
  • Whisk all ingredients together until well combined.
  • Gradually add water, one tablespoon at a time, whisking continuously, until you reach your desired dressing consistency.
  • Taste and adjust seasonings as needed. You might want more honey for sweetness, vinegar for tang, or gochujang for spice.
  • Pour over your favorite salad, use as a marinade, or serve as a dipping sauce. Garnish with sesame seeds if desired.

Notes

Adjust gochujang for desired spice level. For a creamier texture, add a tablespoon of Greek yogurt or mayonnaise. Excellent on green salads, grain bowls, grilled chicken, or as a dip for fresh vegetables. Stores well in the refrigerator for up to a week.
