Ingredients
  

  • 2 tbsp gochujang Korean chili paste
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 0.5 tsp black pepper
  • 2 tbsp water to thin (optional)
  • 1 lb pork shoulder or chicken thighs cut into thin strips
  • 1 tbsp sesame seeds for garnish (optional)
  • 2 units green onions sliced

Instructions
 

  • In a medium bowl, whisk together the gochujang, soy sauce, sesame oil, honey (or brown sugar), rice vinegar, minced garlic, grated ginger, and black pepper. If the marinade is too thick, add 1-2 tablespoons of water to reach a desired consistency.
  • Add the pork shoulder or chicken thighs (or desired vegetables) to the bowl with the marinade. Toss until all pieces are evenly coated. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight for maximum flavor.
  • Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  • Remove the marinated meat from the refrigerator and let it sit at room temperature for about 15-20 minutes.
  • Place the marinated meat on the hot grill. Cook for 3-5 minutes per side, depending on thickness, until cooked through and slightly charred. For vegetables, cook until tender-crisp.
  • Once cooked, remove the Korean Gochujang BBQ from the grill and let it rest for a few minutes. Garnish with sesame seeds and sliced green onions, if using.
  • Serve immediately as a flavorful side dish with rice and your favorite Korean accompaniments, or as a main course.

Notes

For best flavor, marinate meat or vegetables for at least 4 hours, or ideally overnight. This marinade is excellent for pork belly, chicken thighs, beef short ribs, or even firm tofu and mushrooms. Serve with steamed rice, kimchi, and a fresh cucumber salad for a complete Korean BBQ experience. Adjust gochujang for desired spice level.
