Ingredients
  

  • 1.5 lb boneless skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup honey
  • 4 tbsp unsalted butter
  • 1 medium habanero pepper minced (seeds removed for less heat)
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 0.5 tsp smoked paprika

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss chicken pieces with olive oil, salt, and pepper until evenly coated. Arrange chicken in a single layer on the prepared baking sheet.
  • Bake for 15 minutes, then remove from oven.
  • While chicken bakes, prepare the glaze: In a small saucepan, melt butter over medium heat. Add minced habanero and garlic, and sauté for 2-3 minutes until fragrant. Be careful not to burn the garlic.
  • Stir in honey, soy sauce, lime juice, and smoked paprika. Bring to a gentle simmer, then reduce heat to low and cook for 5 minutes, stirring occasionally, until the glaze thickens slightly.
  • Brush about half of the glaze over the partially cooked chicken. Return to the oven and bake for another 10-15 minutes, or until the chicken is cooked through (internal temperature of 165°F / 74°C) and the glaze is caramelized.
  • Remove chicken from oven. Drizzle with the remaining glaze before serving.

Notes

For less heat, remove seeds and veins from habaneros or use fewer. Always wear gloves when handling habaneros. Serve with rice, quinoa, or a fresh green salad to balance the flavors. This glaze also works wonderfully with pork or shrimp.
