Ingredients
  

  • 8 cups water cold
  • 0.5 cup apple cider vinegar raw
  • 1 large ginger root peeled and thinly sliced
  • 0.5 cup maple syrup or honey adjust to taste
  • 1 lemon lemon juiced (optional)

Instructions
 

  • 1. Wash and thinly slice the ginger root. Peeling is optional; leaving the skin on can add more zing.
  • 2. In a large pitcher or jar, combine the cold water, apple cider vinegar, sliced ginger, and maple syrup (or honey). Stir well until the sweetener is fully dissolved.
  • 3. Cover the pitcher and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and deepen.
  • 4. Before serving, strain the liquid through a fine-mesh sieve to remove the ginger slices.
  • 5. Stir in fresh lemon juice, if desired, for an added citrus note. Serve chilled over ice.

Notes

For an extra spicy kick, you can leave the ginger unpeeled. Adjust the amount of sweetener to suit your taste preference. This punch can be stored in the refrigerator for up to a week. Experiment with adding a few mint leaves or a pinch of cayenne pepper for variation.
