Ingredients
  

  • 200 g halloumi cheese cut into 1-inch cubes
  • 2 large peaches pitted and cut into 1-inch wedges
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 cup walnuts toasted and chopped
  • 2 tablespoons fresh mint chopped
  • 8 pieces wooden or metal skewers

Instructions
 

  • If using wooden skewers, soak them in water for at least 30 minutes.
  • In a small bowl, whisk together the balsamic vinegar, honey, and black pepper to create the glaze.
  • Gently toss the halloumi cubes and peach wedges with olive oil in a separate bowl.
  • Thread the halloumi and peach pieces alternately onto the skewers.
  • Preheat your grill or grill pan to medium-high heat.
  • Place the skewers on the hot grill and cook for 3-4 minutes per side, until the halloumi is golden brown and the peaches have distinct grill marks and are slightly softened.
  • Once grilled, arrange the skewers on a serving platter.
  • Generously drizzle the balsamic honey glaze over the grilled skewers.
  • Sprinkle with toasted walnuts and fresh mint before serving.

Notes

For best results, use firm but ripe peaches. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. This dish can be served warm or at room temperature. For an extra kick, add a pinch of chili flakes to the balsamic glaze.
