Ingredients

  • 1.5 lb boneless skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic minced
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp lemon zest
  • 2 bell peppers any color
  • 1 red onion cut into 1-inch pieces
  • Wooden or metal skewers
  • Warm pita bread (for serving)
  • Tzatziki sauce (for serving)

Instructions

  • In a large bowl, combine the chicken cubes, olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and lemon zest. Toss well to coat the chicken evenly. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to marinate.
  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  • Preheat your grill to medium-high heat (about 375-400°F / 190-200°C).
  • Thread the marinated chicken pieces alternately with bell pepper and red onion chunks onto the skewers. Don't overcrowd the skewers to ensure even cooking.
  • Place the skewers on the preheated grill. Cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (74°C).
  • Remove the chicken souvlaki from the grill and let rest for a few minutes.
  • Serve hot with warm pita bread, a generous dollop of tzatziki sauce, and a side of Greek salad or roasted vegetables if desired. For wraps, slice the grilled chicken and stuff into pita pockets with fresh tomatoes, onions, cucumbers, and tzatziki.

Notes

For best results, marinate the chicken for at least 2 hours, or even better, overnight. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Chicken souvlaki can also be cooked under a broiler or on a griddle pan if a grill is not available. Serve with homemade tzatziki, fresh Greek salad, or roasted lemon potatoes.
