Ingredients

  • 4 cup water
  • 2 inch fresh ginger peeled and thinly sliced
  • 100 ml lemon juice freshly squeezed (from 1 large lemon)
  • 8 Tbsp apple cider vinegar
  • 8 Tbsp maple syrup

Instructions

  • Combine the water and sliced ginger in a medium saucepan. Bring the mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover, and let the ginger steep and simmer for 20 minutes.
  • Remove the saucepan from the heat. Carefully strain the ginger water into a heatproof jug or bowl, discarding the ginger solids. Allow the liquid to cool slightly.
  • Stir in the freshly squeezed lemon juice, apple cider vinegar, and maple syrup until all ingredients are well combined.
  • Serve the elixir warm, or chill it in the refrigerator for at least an hour before serving cold. Store any leftover elixir in an airtight container in the refrigerator for up to 5-7 days.

Notes

For a spicier kick, use more ginger or finely grate it before steeping. You can adjust the amount of maple syrup to your sweetness preference. This elixir can be served warm, at room temperature, or chilled over ice. Dilute with a little extra water or sparkling water if desired.
