Ingredients
  

  • 4 cups Water Kefir (first ferment)
  • 0.5 cup Banana slices fresh
  • 0.25 cup Raspberry fresh or frozen
  • 0.25 cup Mandarin orange segments fresh
  • 0.25 cup Apple diced
  • 0.25 cup Persimmon diced
  • 2 slices Lemon
  • 1 inch Liquorice root dried (optional for a unique flavor)
  • 1 tbsp Raisins
  • 1 tbsp Dates pitted and chopped
  • 1 tbsp Prunes chopped

Instructions
 

  • Strain your first ferment water kefir into a clean glass jar, removing the kefir grains.
  • Add all the prepared fruits (banana, raspberry, mandarin, apple, persimmon, lemon, raisins, dates, prunes) and the liquorice root (if using) into the jar with the strained kefir.
  • Seal the jar tightly with an airtight lid. This is crucial for building carbonation.
  • Place the jar at room temperature (68-75°F or 20-24°C) for 24-48 hours. The exact time depends on the temperature and desired fizziness. Taste periodically if you're unsure.
  • Once desired carbonation and flavor are achieved, strain out the fruits and liquorice root (optional, some people leave fruit in).
  • Transfer the finished fruit-infused water kefir to smaller airtight bottles and refrigerate immediately to slow down fermentation. Chill completely before serving for best taste and fizziness.

Notes

For more carbonation, let it ferment longer, but burp bottles daily to prevent explosions. Adjust fruit amounts to your taste. Store in the refrigerator for up to a week. The liquorice root adds a unique, subtly sweet and earthy note.
