Ingredients
  

  • 4 cups mixed ripe tomatoes chopped or halved
  • 4 ounces feta cheese crumbled
  • 0.5 cup fresh basil chopped
  • 0.25 cup fresh parsley chopped
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon sugar or honey
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper freshly ground

Instructions
 

  • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, sugar (or honey), salt, and black pepper until well combined. This is your sweet-and-tangy homemade dressing.
  • In a large serving bowl, combine the chopped or halved tomatoes, crumbled feta cheese, and chopped fresh basil and parsley.
  • Pour the prepared dressing over the tomato and feta mixture.
  • Gently toss all the ingredients together until the tomatoes, feta, and herbs are evenly coated with the dressing.
  • Serve immediately as a refreshing side dish or a light main course. Enjoy!

Notes

For an extra tangy kick, consider adding a small amount of crumbled blue cheese. This salad is best served immediately, but leftovers can be stored in the refrigerator for up to 1 day. Use a mix of heirloom tomatoes for varied color and flavor.
