Fresh Kale & Apple Salad

A crisp and refreshing salad combining the earthy notes of lacinato kale with the tart sweetness of Granny Smith apples, finished with a light vinaigrette. Perfect for a healthy lunch or a vibrant side.

Ingredients
  

  • 1 cup lacinato kale leaves stripped from stems and roughly chopped
  • 1 large Granny Smith apple cored and thinly sliced
  • 2 tbsp olive oil extra virgin
  • 1 tbsp apple cider vinegar
  • 0.5 tsp Dijon mustard
  • 0.5 tsp honey or maple syrup
  • salt to taste
  • black pepper freshly ground

Instructions
 

  • Carefully strip 1 cup of lacinato kale leaves from their fibrous stems, discarding the stems completely. Roughly chop the kale leaves into bite-sized pieces.
  • Wash and core 1 large Granny Smith apple, then slice it thinly.
  • In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, Dijon mustard, and honey (or maple syrup) until well combined to create the dressing.
  • Place the chopped kale and sliced apple in a large mixing bowl.
  • Pour the dressing over the kale and apple. Season with salt and freshly ground black pepper to taste.
  • Toss gently until all the ingredients are evenly coated. Serve immediately and enjoy!

Notes

For a softer texture, massage the kale with a little olive oil before adding other ingredients. Add toasted walnuts or pecans for extra crunch. A touch of crumbled feta or goat cheese also pairs wonderfully.
