  • In a medium bowl, whisk eggs, milk (if using), salt, and pepper until well combined and slightly frothy, but not vigorously.
  • Melt butter or heat oil in a non-stick skillet over medium-low heat. Ensure the pan is not too hot to prevent overcooking the eggs.
  • Pour the egg mixture into the skillet. Let it sit undisturbed for about 30 seconds until the edges just begin to set.
  • Gently push the cooked edges towards the center with a heat-resistant spatula, tilting the pan to allow uncooked egg to flow underneath. Continue this gentle folding and stirring motion.
  • Cook for another 1-2 minutes, continually folding and stirring, until the eggs reach your desired consistency—moist and fluffy but not runny. Remove from heat immediately.
