Ingredients
  

  • 200 g chicken breast boneless
  • 2 tbsp sweet thai chili sauce low-sugar version
  • 1 cup broccoli florets fresh or frozen
  • 0.5 cup cooked brown rice prepared
  • 0.5 tsp sesame oil optional
  • 0.25 tsp garlic powder

Instructions
 

  • Preheat grill or grill pan to medium-high heat. Season chicken breast with salt, pepper, and garlic powder.
  • Lightly brush chicken breast with 1 tablespoon of the sweet Thai chili sauce.
  • Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  • While chicken cooks, steam broccoli florets until tender-crisp, about 5-7 minutes.
  • In a small bowl, toss the cooked brown rice with the remaining 1 tablespoon of sweet Thai chili sauce and a drizzle of sesame oil, if using.
  • Serve the grilled chicken immediately alongside the sauced brown rice and steamed broccoli.

Notes

For extra flavor, marinate the chicken in a little lime juice and garlic powder for 30 minutes before grilling. You can substitute chicken breast with firm tofu or shrimp for a vegetarian or pescatarian option. Adjust the spice level of the Sweet Thai chili sauce to your preference. Fresh cilantro or green onions make an excellent garnish.
