  • 1.5 lb boneless skinless chicken thighs
  • 4 medium potatoes peeled and diced
  • 2 medium carrots peeled and sliced
  • 1 head broccoli cut into florets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • In a large bowl, combine chicken thighs, diced potatoes, sliced carrots, and broccoli florets.
  • Drizzle with olive oil and sprinkle with garlic powder, paprika, dried oregano, salt, and black pepper. Toss until all ingredients are evenly coated.
  • Spread the mixture in a single layer on the prepared baking sheet.
  • Roast for 30-35 minutes, or until chicken is cooked through and vegetables are tender-crisp. Flip ingredients halfway through cooking for even browning.
